Now that spring is here in full force we find ourselves outside barbecuing pretty much every meal we can! So we figured, why not try barbecued pizza? We gave it a go and it is a definite winner! Cooking the dough on the grill makes for a real crisp and crunchy crust, which is our favorite kind! So here is a fun dinner recipe for your next patio party, along with some fun pizza topping ideas!
-1 cup of flour -1/2 cup of warm water -1 tsp of active dry yeast -1 tsp of salt.
Mix all of the ingredients together in a bowl, knead the dough, then roll it out into two pizza shells. Then brush both sides of the dough with a bit of olive oil and cook them directly on the BBQ grill for 2-3 minutes per side on low-medium heat. You just want to cook them until the crust starts to slightly brown. Pre-cooking the dough a bit before adding the toppings makes for a crispier crust!

This is probably one of my all-time favorite flavor combinations, I just love the mix of salty & sweet! What I did to make this pizza was start off by drizzling a bit of olive oil onto the pre-cooked crust and then spread some fig jam over top of that. Next caramelize some chopped onions and lay them down on the crust along with some strips of prosciutto. Then cut the cambozola cheese into thin strips and lay it over top of everything. After that cook it on the BBQ for another 4 minutes, or until the cheese starts to melt and bubble up a bit. Once its finished cooking sprinkle a generous amount of arugula over the pizza and squeezed a little bit of fresh lemon over top everything! Mmm...yum!
This is a very fresh tasting pizza which is perfect for a warm summer evening (not to mention that this recipe is a great way to use some of the basil growing in your herb garden!) This is very quick and easy to make; simply start by brushing the pre-cooked crust with some olive oil then cover the whole thing with fresh basil leaves. After that chop some cherry tomatoes and bocconcini pearls (fresh mozzarella) in half and sprinkle them generously over top of the entire thing. Cook for 4 minutes on the BBQ and drizzle a bit of balsamic vinegar over the pizza before you serve. So fresh and delicious!
This is one of my favorite go-to pizzas when it comes to having a pizza night! For those of you who like a little spice, this pizza is for you! Start off by covering the crust with a regular tomato based pizza sauce. Next crumble a bunch of feta and sprinkle it over top of the entire thing (for those of you who like your pizza extra cheesy like me, feel free to grate some mozzarella cheese on top as well!) Next add some pineapple chunks and jalapenos (add a few more if you like it extra spicy!) BBQ for 3-4 minutes and then dish up!
